Recipe: Rice


Ingredients:
1 cup long grain white rice
2 tbsp lime juice
2 cups water
1 tsp salt
3 tbsp fresh cilantro, chopped
2 tsp extra virgin olive oil

Directions:
1. In small pot combine water, salt, rice, and 1/2 of the oil. Bring to a boil and continue to boil until the water just covers the rice.
2. Turn the heat down to low and cover the rice for an additional 15 minutes.
3. Then turn off the heat and let rest for 5 minutes.
4. Once the rice has rested, fluff it with a fork. Stir in the lime juice, oil, and cilantro. Season with additional salt as needed.
